Drain the ramen and add the noodles to the skillet. Turn to low and keep warm. Bring water in a medium sauce pan to boil. Break noodle "squares" in half and add to boiling water.

- Soak the dried wood ear mushrooms and shiitake mushrooms in separate bowls to rehydrate.

- Add leek and chives and stir-fry in residual heat in the pan. Add pepper to taste, mix well and it's done.
Drain water, and add cooked noodles to skillet of vegetables. Increase heat under the skillet to high.
