Serve hot with hot chana and slices of onion and lemon. For Chana: Put the soaked and washed chana in a cooker with enough water, sugar, tea pouch, and bay leaves. Bhatura is mostly associated with Chole or Chana.

  1. Take all purpose flour in big parat or bowl and add peeled and mashed boiled potatoes into it..now add carom seeds, salt, oil and soda and knead the dough..add water if required..
  2. Keep the dough by covering it with wet cloth and keep it aside for 15 minutes..
  3. Now prepare chana…soak chana overnight..and then pressure cook white chana upto three whistles by adding a cloth tied with tea leaves, salt and baking soda into it..
  4. Prepare masala,, wash and chop onions and take a blender and add ginger, garlic, dalchini, cardamon, cumin seeds and blend it
  5. Take a wok and add oil into it and chopped green chilli and then add blended onion into it..
  6. Cook it for 4-5 minutes and add salt as per taste..
  7. Add anardana powder and turmeric powder into it..and cook it till it becomes red in colour
  8. Now add tomato paste into it and add black pepper powder into it and cook it for next 3-4 minute
  9. Add this masala into pressure cooked chana..and mix it properly into it..and serve it with bhatura..
  10. Now take the kneaded dough and take small portion of it and roll it as chapati and fry it in oil..and serve it..
